Philosophy
IICA studentsThere are many things that distinguishes the International Institute of Culinary Arts from other culinary schools. With an intense curriculum and hands-on training, students will learn the skills that are necessary for a successful career in the food and hospitality industry. IICA studentsThe art of cooking is perhaps the most ancient art, for it dates back to the prehistoric age. Man, as a creature, has always had the intrinsic need to nourish himself. But it was not until the advent of the discovery of fire, that cookery took on the mystery and the beginnings of its present form.

After 200 years of evolution, American Regional Cuisine stands strong and tall and is able to challenge the international cuisines in the arena we call the Culinary Olympics. Over the past 20 years, IICAAmerican chefs have competed with European chefs and have won countless awards. Surprisingly enough, American food prepared by American chefs has won more gold medals than any European cuisine. The time has come for us to spotlight American cooking traditions, style and innovations. Why should we make pilgrimages to Europe in search of the latest food trends, when we have exceptional cuisine right here in the United States?

The foundation of prosperity and the strength of the United States is based on the solid educational background of the next generation. The single most important recipe in cuisine is the one used for making the chef.
